Menu Monday 2nd November 2009

Baby it is getting dark and cold outside, which makes it times for winter warmers. When I get home in the evening since the clocks went back I am usually starving so I want some quick and easy food this week.

Monday – Chicken and pea risotto made from yesterday’s leftover roast chicken and freezer stock.

Tuesday – Cod fish cakes and salad- on special at M&S, £1 for 2.  I will be buying extra for the freezer, such a good deal.

I will be making chicken soup made from Sunday’s carcass, with orzo, carrots, onion and peas to take for lunch.

Wednesday – Chili from the freezer with salad and bread.

Thursday -Drinks with a work colleague, so I will bring almonds and have some bar nibbles.

Friday – Pasta al tonno – I learned how to make this when visiting friends in Florence.  Super easy to make, mostly from the cupboard. This recipe is the closest to the one I make. I like to break up the tuna as much as possible and contrary to the recipe I like to put grated cheese on top.

Saturday – Lovely steak, baked potato and salad, a real treat.

Sunday – Roast Pork with homemade apple and pear sauce, roast potatoes and green vegetables.

This week I will be researching stews and other main dishes that can be frozen so I can do a big feed the freezer day.  Any suggestions?
