Menu Monday Christmas 2009

Sorry about the tardiness of this week’s Menu Monday.  I just was not entirely sure what I was going to make for Christmas.
The past three Christmases I have spent with my beloved, the way we work it is I do a sort abbreviated of Feast of the Fishes for Christmas Eve and he does a majority of the cooking on Christmas Day.

I get really excited about trying to do Feast of the Fishes, it is challenging to try to fit seven fishes in one meal for two people.  This year has been a difficult one to say the least so I want to make Christmas Eve super special and luxurious.

For this Menu Monday I am going to skip right to the exciting Christmas food since the days before will be filled with parties on Monday and Wednesday so no cooking to be done.

Viviana’s Feast of the Fishes on Christmas Eve  – this is going to be a leisurely meal so I am going to start with nibbles of fried calamari and garlic king prawns with chili.

First Course – Lobster ravioli with Champagne Cream Sauce topped with a lightly seared scallop.  I am buying the ravioli but will be making the sauce. It should not be out of sight expensive because I am buying the raviolis singularly and since they are rich, I will only make 2 -3 each person. I am thinking of topping them off with a tiny bit of fish roe.

The main course will be roasted Monkfish wrapped in Parma Ham with roasted rosemary potatoes and green beans.

I am going to make panna cotta for desert which is light after all the heavy, rich dishes.

Christmas Day – My beloved is doing most of the cooking,  yay for me.  He spotted this Nigel Slater recipe for Roast Fillet of Beef and Pumpkin Ragout which sounds amazing.  I am going to add a potato Dauphinoise and more vegetables.

Boxing Day we will be visiting family so no cooking again then we are back on track with planning and frugality.
