I must apologize to my lovely readers for being MIA last week. It was an eventful week, a surprise visit to the hospital which led to a total loss of a week. Now I am back in action full force so what’s on the menu?
Monday – Goat Cheese and Roasted Red Pepper Quesadillas – super easy and super quick
Tuesday – Curried carrot and parsnip soup with good bread
Wednesday – Leftover Moroccan Lamb with Prunes from last week – the recipe made so much that I had to freeze some.
Thursday – Mediterranean Salad with Prosciutto and Pomegranates – sounds expensive but Lidl has prosciutto for £1.49 and both pomegranates and fennel are in season. Cheap luxury, don’t you love it?
Friday – Cheese burgers with chili cheddar cheese and salad.
Saturday – Jerk fish with rice and peas – a little Jamaican warmth in the chilly weather.

Hello Mrs. B, thanks for commenting. I don’t have a formal recipe for the curried carrot and parsnip soup but here is an approximation.
1 large onion sliced chicken stock to ocver
2 parsnips Garam Massala
2 lbs carrots salt and pepper
Cayenne pepper
Roughly chop carrots and parsnips, put in slow cooker with onions and chicken stock, cook on low for 6 -7 hours. I added the Garam Massala when the vegetables were soft.
Puree then adjust seasoning, this is when I added the cayenne and serve with a touch yogurt.
I am not exactly sure of the cooking times as I did it off the hoof. Sorry to be so vague.
