This is my first week of full time work which often keeps me in the office until after 7 along with writing for two blogs, I think I am going to find cooking dinner every night a challenge.
When I was working 3 days a week, I would cook in between writing which gave me a wonderful balance, now I think I am going to need to turn into Wonder Woman or at least become a lot more organised. What is the point of working to make more money then to spend it on convenience food? Wish me luck on sticking to the menu and not buying a pizza.
Monday – Penne with fresh tomato, proscuitto and mozzarella sauce.
Tuesday – Fruity Coronation Chicken salad on rocket – made with leftover roast chicken from Sunday
Wednesday – Lamb chops with Greek salad- chops on sale at the butcher.
Thursday – Panko Shrimp Cakes with Sriracha Aioli with rocket salad – I am going to make them the night before to let them set in the fridge, when I made them before they fell apart a bit but still tasted wonderful.
Friday – Cheeseburgers with caramelized onions and potatoes latkes. – This is my fall back meal, not expensive and made within 30 minutes. – Do you have a fall back meal? Please leave me a comment, I so need a few more.

I have a couple of fall back meals. For breakfast, especially if I’m eating out, an egg-white veggie omelet. Lunch is typically salad with grilled chicken. Dinner is stir-fry. I also use Shakeology every day!
