Menu Monday 2nd April 2012

Since I have not been working as much as I need to money has been quite tight. Hence,  I have been trying to convert my meat and potatoes man into eating more vegetarian fare. It is so much cheaper especially since we have a great fruit and vegetable market nearby.

Monday – Roast chicken, potatoes and fennel with a rocket salad (I got three bags at Tesco for 10p each)

Tuesday – Being taken out to eat, this is the first time since Valentine’s Day. I am very excited!

Wednesday – Aubergine pasta bake with pesto crust (phot0)- I actually made this Sunday night. Have a look at the photo. It was very tasty but next time I would put it in a flatter dish.

Thursday – Chicken burittos made with the leftover chicken from Monday. Clean the chicken after the main meal so it is easy to use later.  I am using black beans from the freezer.

Good Friday – Panko shrimp cakes with sriracha aioli – these work better if made left in the refrigerator for a few hours to set.
