Menu Monday 5th May 2014

Happy Cinco de Mayo in the US and May Day here in the UK. I am envious of people enjoying all that authentic Mexican food in the States but since we have an extra day off this week we are going to start it with a roast chicken.

I was in the New York last week and am still dreaming about the gorgeous fish tacos I had.  I don’t think I can make them with fish fingers AKA fish sticks. I had better leave it to the professionals.

Monday – roast chicken with new potatoes, asparagus, and grilled courgettes(zucchini)

Tuesday – Spanish tortilla, tomato and red onion salad with bread

Wednesday – pseudo Mexican food – black bean and leftover chicken burritos with homemade salsa and guacamole  – both are so easy to make and taste so much nicer.

Thursday – linguine with spicy shrimp – frozen shrimp from Lidl

Friday – cheeseburgers with caramelized onions and salad
