Hello Menu Monday, it has been a while. Over the past couple of months I have let my regular posting schedule slip. I am sorry and thanks for still visiting. My life has had yet another big upheaval (which I will tell you all about later in the week), so now I am trying to get back on track and sort out putting my energy into what counts.

Here is what’s cooking.
Monday – Roast chicken with saffron orzo and grilled zuchini
Tuesday – Impossibly Easy Cheeseburger Pie with salad
Wednesday – Butternut squash sacchettini (little sacks) with pine nuts and sage. Bought in the market, super cheap.
Thursday – Quinoa Tabbouleh with spicy lamb sausages
Friday – Scallops in garlic butter (on sale at Lidl) over linguine.

I’ve never tried Quinoa, does it taste like cous cous? I might give it a try.
Hey Mr, thanks for stopping by. You prepare Quinoa like couscous but I think it tastes more nutty. In this recipe the herbs are the strongest flavour.
