I am aware that it is May but the weather is making it feel like October, so confusing for us that try to eat in season. This cold snap is bringing me right back to my autumnal favourites.
Monday – Nigella’s Brandied-Bacony Chicken served with sweet potatoe mash and green beans
Tuesday – New York patty melts on rye bread with rocket salad – a NY patty melt is a hamburger with caramelized onions and cheese. I have chosen a NY themed dinner because we are scheduled to plan our trip after dinner. Getting excited…
Wednesday – Jamie Oliver’s Choirzo and Butter Bean Stew
Thursday – Chicken and orzo soup made from Monday’s roast chicken in the slow cooker. Perfect for after sewing class.
Friday – Pancetta wrapped cod with new potatoes and salad
Saturday – We are going to a special family party so no need to cook.
Sunday – Homemade pizza and salad – we are trying to save up so making pizza at home makes us feel like we are doing something special.
Confession – I did not make gazpacho last week as the vegetables in the market were more expensive than usual and the chill in the air did not make me crave cold soup. I do have high hopes for next week.

The bacony roast chicken looks great and so easy! I love things with only 3 ingredients. Leftovers can be used throughout the week too.
