Today is supposedly the most depressing day of the year but over here at The Lean Times, we are not buying into that rubbish. We are going to eat vibrant foods both in colour and taste to chase away the blues.
Monday – Pollack fillets in garlic butter and spicy sweet potato wedges
Tuesday – Sausage and butternut squash bake
Wednesday – Roasted red pepper soup, this was so good last week, I had to make it again. It is also super quick as I am starting my sewing class again, yippee.
Thursday – Pasta with Puttanesca sauce
Friday – Maple roast chicken with sweet potatoes
