I am so excited that it is March, this winter has been insufferable in London, very cold and very grim. In honor of the sun shining on the first Monday of the month, I have decided to make sunny food this week. I am calling my menu down Mexico way. The bad news is my sunny menu won’t start until Tuesday when my big food delivery arrives.
I have a confession to make – last week went slightly awry, my Beloved got some great bargains at the shops and felt like cooking. I could not resist (who would?) to opportunity to be waited on, so I never go a chance to make my black beans or the pizza from scratch.
Monday – Omelette day again, last week’s omelette with tarragon mushrooms and Gruyère was so good, I am making it again. While making my omelette, I will have black beans cooking away in the slow cooker.
Tuesday – Black beans and rice burritos with salsa and cheddar cheese. I would prefer to use Pepper Jack cheese but I can’t find here.
Wednesday – I found large frozen shrimp on sale so I am making Mexican Shrimp. The recipe sounds super quick and delicious.
Thursday – Chicken Quesadillas – I have not found a recipe that I really like so I am going to wing it. Saute chicken breasts cut into strips, add peppers and onions, perhaps a bit of garlic then salsa. Warm two flour tortillas then put chicken mixture and cheese between them and press down. I am going to serve with mashed black beans.
Friday – Nigella’s Mexcian Eggs I love this recipe – it is easy, cheap to make and goes just as well with a cup of strong coffee as a glass of cold white wine.
Saturday – I promise I am going to make my homemade pizza. I have found a recipe for the dough, going to make the tomato sauce and have tons of ideas for toppings.
Sunday – I am hoping to find some nice fish to pan fry but won’t know exact what I am preparing until I go to the fish shop.
