We are having a little heat wave in London, it reminds me of my NY summers but without aircon which makes it much more unbearable. Since we don’t usually have hot, sticky summers most places you would go to write or just to cool down don’t have air conditioning so coffee shops, libraries and pubs are all ruled out to chill out.
Which only leaves me with the dairy section of my local supermarket, not the best place to hang out for long periods of time. This week I am going to try to make no cook or minimal cooking dinners.
Monday – chunky gazpacho with bread and cheese
Tuesday – chicken salad with grapes and blue cheese
Wednesday – out a meet up
Thursday – pasta with no cook tomato and ricotta sauce
Friday – jewel couscous with duck breasts

Gazpacho is great when it gets hot. I definitely eat more of it in summer than any other time of year.
