This week I nabbed some very cheap crepes in the market so I will be experimenting with making fillings.
Monday – Pasta with bolognaise sauce from the freezer.
Tuesday – Crepes stuffed with garlic mushrooms and salad.
Wednesday -Slow cooker roast chicken with green beans
Thursday – Crepes stuffed with ratatouille and goats cheese accompanied by salad
Friday – Sole with herbs served with new potatoes and veg
Saturday – Mushroom risotto with a splash of truffle oil with salad.
Do you have any favourite crepe filling recipes, you can share? I have a lot of pancakes to fill.
The good news is that pancakes/crepes freeze really well if you can’t use them all up right away! My Mum used to fill them with bolognese sauce and bake them in the oven with a bit of bechamel on top. I really like them filled with chunky fried onions, wilted spinach and grated strong cheddar cheese. I want your Friday dinner as well – sole’s gorgeous.
