We have just come back from a lovely holiday in the south of France – all I can say is the food was amazing. We rented a tiny little flat near the beach in a not so salubrious area outside of Cannes. We only ate out a few times for lunch not because we were trying to be particularly cheap but because the food in the supermarket and the area was of such good quality that we did not feel the need.
It is amazing how being a sunny climate makes you want to eat healthily. We had salad with almost every meal and gorgeous fruit. I want to bring back to London, the way we were eating in France, so here goes –
Monday – Steak, white bean mash and salad – I have a coupon so this will be affordable
Tuesday – Spaghetti with fresh cherry tomato sauce – I like to add a bit of pepperoncino to the mix.
Wednesday – Chili and honey chicken thighs with cilantro lime rice and black beans
Thursday – Red Pepper and Baked Egg Galettes – keeping with the French holiday feeling
Friday – fish fillets with salad or perhaps a lovely omelette instead of the fish

My husband and I took our first trip to France last fall and were blown away by the food. Everything we ate, no matter how simple, was delicious. We can’t wait to go back!
We could not believe how much better the fruit and vegetables were – I shop at my local market so the produce is fresh but this trip blew us away.
Thanks for visiting Deanna!
I am very jealous of your trip to France. Of course it Is easier to get to from London than anywhere in the USA.
I noticed you have black beans in your menu plan. You might be interested in a post I recently did about black beans: http://www.lifeascindy.com/what-to-do-with-black-beans/
I loved your post on black beans – so worth a look, lovely readers. I use dried beans, which are cheaper and tastier than canned. Recipe – Slow cooker black beans. Enjoy!
