I don’t have much to report this week except for feeling as though I am not getting enough done. I hate not living up to my own expectations.
Monday – Roast chicken with roast potatoes, parsnips and broccoli. My beloved is cooking for me, so I don’t have to yipee!
Tuesday – Gnocchi with homemade meat sauce
Wednesday – Curried Rice with shrimp
Thursday – Spice rubbed pork chops with black beans and yellow rice
Friday – Slow cooker Italian Wedding soup– made with stock from Monday’s chicken
Saturday – Mushroom risotto – I will hopefully find some wild mushrooms in the market. I will also be using my slow cooker chicken stock.

These days I just accomplish what I can and leave the rest for the next day. Of course if it’s time sensitive those things get done ASAP.
