Menu Monday 6th December 2010

Well this is the first December Menu Monday and I must admit that I fell a bit short at my November Get it Done goal of £700 in extra income.  I did make £352, which is not too bad from just selling stuff and doing a market research day.

This month I will continue to try to make extra cash from eBay, a Christmas market in which I am selling jewellery and hopefully if I get my skates on some very cute cat toys. I will keep you posted on my progress.

I did do a lot of batch cooking this weekend – I made enough black beans in the slow cooker to feed a giant Mexican family and made caponata for the first time.  Caponata is super versatile; you can use it as a dip, as pasta sauce and as a relish.

Monday- Pan fried Sea Bass with Caponata

Tuesday – Beloved is making pork in cider with apples

Wednesday – Christmas work do so not cooking for me

Thursday – Burritos with black beans and leftover chicken from Sunday roast

Friday – Caponata over penne with lots of Parmesan – I might throw in some pieces of fried chorizo.

Pop by tomorrow as I will have a very nice disount on wine for you lovely readers – major discounts.
